The Brief
The Merrion is widely regarded as one of Ireland’s finest five-star hotels — a beautifully restored Georgian landmark that feels both historic and genuinely luxurious, with a world-class art collection, excellent dining, and highly praised service.
When the hotel’s management decided to create a garden restaurant in 2016, they approached Fashionizer to assist with the restaurant uniforms and bring a fresh look to the hotel’s established image.
The Garden Room is located within the hotel’s courtyard gardens — a formal space complete with a fountain, overlooked by lounges and guestrooms on three sides. Set within a restored Georgian house in the heart of Dublin, the restaurant opens directly onto this tranquil garden setting. The Garden Room offers modern Irish cuisine with a relaxed, informal character — a deliberately easy-going experience within an otherwise grand five-star hotel, where guests can enjoy beautifully crafted dishes in one of Dublin’s most elegant and atmospheric settings.
Fashionizer's Uniform Solution
The Merrion appointed Oscar-nominated Irish costume designer Consolata Boyle to create the initial design concepts, which were then interpreted and developed by Fashionizer into practical uniforms suitable for a range of luxury hospitality roles. The palette is refined and understated — soft grey checks with light gold and pale blue accents featured in trims and aprons.
The Outcome
In keeping with the need for stylish elegance, Fashionizer sourced traditional high-quality fabrics including pleated poplin shirting, sharkskin wool, and Prince of Wales suiting for the waistcoats worn by dining staff. The shirts are cream — softer than white — with matching ties.
Fashionizer has worked with the Merrion Hotel since 2000, and among the exclusive items originally designed for the Front of House uniforms were bespoke silver buttons inspired by the hotel’s Georgian ceiling roses. For the Garden Room uniforms, the same button design was reproduced in a softer bronze tone, tying the new restaurant seamlessly into the hotel’s wider aesthetic.
